What better place to start than with a traditional treat that everyone can enjoy and participate in making around the fire…
Stokbrood!
Firstly, you will need to prepare your stokbrood dough and your sticks.
Ingredients:
375g plain flour
1 teaspoon salt
1 tablespoon caster sugar
7g dried active baking yeast
2 tablespoons olive oil
225ml lukewarm water
Mix all the ingredients together and knead for approximately 10 minutes. Once done, fill a bowl with your mixture and seal the top with clingwrap. The mixture is now ready to be put aside in a dark, warm place away from sunlight, leave it for roughly an hour or until it has doubled in size.
Next you will need to select your sticks, this is a very important part of the process as your stick will have a great influence on the quality of your bread, make sure that your sticks are mostly straight and long. Be careful to only use sticks that are safe and not to use anything that may be poisonous or unhealthy.
Now you’re ready to apply the dough to the sticks…
Start by dividing your dough into between four and six balls. Take the balls and roll them into elongated tubes that can wrap around the length of your sticks, leaving some space to handle the stick on one end.
Move over to the fire with your prepared sticks and roast them over the coals once they are medium to hot in temperature. Do not put the bread directly in the flames but rather elevate it from the coals. Turn the sticks slowly for roughly 15 minutes until they turn golden brown. The final test is to tap the bread lightly and if you hear a “hollow” sound your bread is ready!
Meal or dessert? You choose!
Fill the centre hole of the stokbrood with jam and butter for breakfast. Serving pudding? Fill it with caramel or custard. You can even fill it with boerewors or sausage!
