Budget Bunny Chow!

2020 has been a difficult year for everyone and the thought of catering for a family gathering is even more daunting when belts are tight. That’s why we thought we would do a South African classic without breaking the bank. The recipe below made enough to feed 15 people with large portions for less than R500.00! So without further preamble Pretoria Caravans & Outdoor presents the Budget Bunny Chow!
What you’ll need:
 
3 whole chickens
5 loaves of bread
1kg potatoes
4 carrots
4 onions
Mild curry powder
Powdered ginger
Turmeric
Vinegar
Apricot Jam
Oil
 
What to do:
 
Prepare the ingredients by cutting the bread loaves into halves, pealing the potatoes, grating the carrots, chopping the onions and cutting the chicken into portions. Also, make a mixture of ginger, curry powder, turmeric, vinegar and apricot jam.
 
Add your onions to a potjie pot and allow them to fry. While frying add your mixture to the onions in the potjie and stir together. Add the chicken pieces to the potjie and cook until the chicken is cooked medium. Add to potatoes and carrots to the potjie and cook until potatoes and carrots are soft.
 
Cut out the inner bread from the half loaves, creating a “bowl” out of each half loaf. Serve directly from the pot into the half loaves of bread and enjoy!
