Cheese & Bacon Potbrood

Not all recipes need to be complicated to make delicious food, this month we went back to basics and made a tasty bacon & cheese pot brood!

What you need

  • 500g self-raising flour
  • 250g streaky bacon strips (rindless)
  • 1 egg (beaten)
  • 30g sugar
  • 2 g salt
  • 340ml beer (your preferred brand)
  • 100ml water
  • 100g cheese (grated)
  • Garlic
  • Olive oil
  • Freshly chopped rosemary or thyme

 

What to do

 

Prepare a fire with charcoal. Then get started by greasing a potjie pot with butter making sure that both the bottom and sides of the pot are greased. Line the pot with the bacon strips both bottom and sides. Mix the beaten egg and beer together, then sift the self-raising flour sugar & salt and add them to the mixture of beer & egg. Fold the grated cheese into the dough mixture saving just a little bit for later. Add the dough mixture to the potjie pot and fold the bacon from the sides over the top of the dough mixture and add the remaining grated cheese on top. Place the potjie pot in the centre of the burning coals and pack the remaining hot coals around the sides of the potjie pot. Allow the bread to bake for roughly 25 minutes, when done, remove the potjie pot from the coals and set aside to cool before serving.
