Meatballs & Spaghetti
 
There are a lot of public holidays and long weekends coming up and sometimes the best meal to plan is a familiar family favourite… like spaghetti and meatballs! We, here at Pretoria Caravans & Outdoor, have put our spin on this delicious & easy campsite meal using your microwave and a Snappy Chef induction stove. Make a little too much of this recipe because everyone will want seconds and will probably munch on the leftovers the next morning… the way it should be!
 
What you’ll need
Olive oil
500g spaghetti
750g lean mince
Eggs x2
Potato x1
Onion x2
Carrots x2
Tin boerie tomato relish x 1
 
What to do
Add the spaghetti to a microwaveable plastic container and fill with boiling water until the spaghetti is completely submerged. Add some salt and a small amount of olive oil to prevent the spaghetti from sticking. Cook the spaghetti in your microwave, stirring in two-minute intervals until al dente or to taste.
 
Next, begin grating your potato, carrots and one of the onions and mix into the mince with the two eggs. Add your favourite meat spices to the mixture. Roll the mixture into balls and fry them in a pan on the Snappy Chef induction stove on medium heat in a little bit oil until fully cooked and set them aside.
 
Chop and fry your remaining onion until medium brown and add the tin of boerie relish. Simmer for 5 minutes using your Snappy Chef induction stove. Then add your meatballs and simmer for another eight to ten minutes and serve with your spaghetti.
