Savoury & Sweet Pancake Stacks

It is Mother’s Day this month and what better than to treat mom than with dinner and dessert! We’ve added a twist to this Mother’s Day recipe, though… not only is it easy enough for those of you who don’t cook very often to make (…you know who you are!) but it’s also made out of pancakes! Put on those aprons and grab a pan, it’s time to treat mom…

What you’ll need:

Pancakes:

1 1/3 Cups all-purpose flour 160g

1 tbsp baking powder

2 tbsp sugar

1 tbsp salt

1 large egg

4 tbsp butter melted

1 cup buttermilk

2 teaspoons vanilla extract

 

Sweet Stack:

Bananas

Ice Cream

Cinnamon Sugar

Syrup

 

Savoury Stack:

Guacamole

Scrambled Eggs

Cooked Cheese Grillers

Tomatoes, Onion & Pepper (puree)

Cream Cheese

 

What to do:

Sift the flour, sugar, baking soda & salt into a large bowl. In a small bowl, melt the butter and in a medium sized bowl, whisk the buttermilk, egg & vanilla together. Once mixed add the melted butter and stir. Add everything to your large bowl and mix everything together while being careful not to overmix, if it is a little lumpy that’s ok! For best results make sure your batter is room temperature.

Add a piece of butter to a pan on medium-high heat. Once melted and bubbling add 1/3 to 1/2 cup of your pancake batter to the pan. Cook for a few minutes until golden and flip the pancake over. Cook for an additional minute set you pancake aside and repeat for each pancake – don’t forget to keep adding butter as you go.

Split all your pancakes in two stacks (one for mains and one for pudding!).

For the main course divide your stack into four layers (base, second layer, third layer and top), starting from the bottom add scrambled eggs and cream cheese to the base layer and cover with the second layer of pancakes. The second tier is where the tomatoes, onion & Pepper puree and cooked cheese grillers go. Finally, add your third layer and more scrambled eggs and cover with the top layer. You can add a little guacamole & cream cheese on top to add a little flourish.

Next up it’s time for some sweet dessert! Divide your dessert stack up into four layers just like above. Add bananas over your base and cover with the second layer. Add ice-cream, cinnamon sugar and syrup to the second layer. Finally add the third layer and fill with more bananas and cover with your final layer.
